Combining greens with healthy proteins and fats will enable your body to absorb the nutrients and leave you completely satisfied until your next meal.

You want an oil that is solid at room temperature, such as coconut oil to cook all of these goodies up in the healthiest way possible. Here’s how to create a nutrient-packed, incredibly delicious morning scramble to start your day off right:
One head of kale, spinach, or chard washed, and chopped
1 shallot, diced
2 tablespoons coconut oil, or other recommended oil that is solid at room temp
1 crushed garlic clove (optional)
½ cup ground chicken sausage (organic and pasture raised)
2 eggs from pasture raised hens
¼ cup toasted sesame seeds
1. Heat 2 tablespoons coconut oil in large saucepan over medium heat, add shallot and garlic and cook until soft
2. Add greens to saucepan and cook until dark green, and wilted.
3. Add sausage, well crumbled, and cook until brown.
4. Finally scramble the eggs either in a bowl or add to the pan and scramble. Cook until eggs are as done as you like them.
5. Salt and pepper to taste and enjoy!
